Born in Ipswich and raised in London, James Oakley has travelled half the world to come to the tropical paradise island of Phuket, yet he seems more at home than ever. After years of experience in big cities like London and Hong Kong, his Thailand adventure started with the wish for his 10 month old daughter to grow up in the warmth of Thai hospitality and Phuket’s natural beauty. James’ passion for cooking came from his grandmother whose freshly baked bread and roasted joints are some of his fondest childhood memories. Through his storytelling and culinary art comes his great passion for life, humanity and respect for everything: he urges people to connect with food and the simple use of flavours. For James, cooking is all about taking comfort in the simplicity of using what Mother Nature creates. Often the finest food comes from the most humble of produce, making simple dishes that anyone would love is the foundation for great cooking. James’ culinary journey started in the best possible way gaining a traineeship under the guidance of one of UK’s most celebrated chefs “Gordon Ramsay” before honing his skill with Michelin Star Chef “Jeremy Medley”. He then held senior roles with Lord of the Manor a one star Michelin Restaurant before helping “Tassili” gain its first Michelin Star. As the new Executive Chef at Pullman Phuket, he not only is excited about the new and exciting flavours Thailand has to offer, but equally enthusiastic about sharing his knowledge and culinary skills to develop his Thai team of chefs. Referring to the Pullman Phuket vision of creating ‘a great resort guests love’, James himself lives by this creed. When asked towards the end of our brief but inspirational conversation about his cooking philosophy, his answer is simply “Passion”.

Chef Seumas has been honing his skill with arguably U.K.’s finest and indeed one of the world’s best chefs “Heston Blumenthal”, at his world famous 2 star Michelin restaurant “Dinner” in London U.K (Currently voted the 5th best restaurant in the world).
The six-course dinner at Vero Trattoria & Wine Bar, PULLMAN Phuket Arcadia on Friday 21 November, 2014 showcases three of their favourite or signature dishes each, paired with refined cocktails from our resident mixologist to create a culinary experience at one of Phuket’s most stylish resorts.
